Chapter synopsis: An organic system for raising poultry aims to provide a sustainable method of rearing poultry in an environment that allows natural behaviour to be expressed, and which eliminates pesticides, herbicides and other chemicals from feed, growing environment and carcass processing. This chapter reviews the important components of such a system, with sections covering housing and nutrition for organically reared poultry, the management of farm resources and bird health, ensuring food safety, and the oversight of poultry meat processing and product labelling.
