This chapter reviews the use of potato co-products as alternative feed ingredients in livestock production. The chapter begins by providing an overview of key nutritional characteristics in potato, which is then followed by a discussion of potato co-product yield and nutrient variability. It then moves on to discuss the efficacy of potato co-products in ruminant production, focusing specifically on vine/leaf utilisation and the application of potato pulp/residue. Sections on the use of potato co-products in specific livestock species are also included, beginning with swine, then concluding with a section focused on poultry and other species.
