Chapter synopsis:

The founding principles of organic farming (health, ecology, fairness and care) guide the overall ethos of organic farming in an ever-changing environment. Using these principles, this introductory chapter discusses the key environmental, welfare, economic and other challenges facing contemporary organic dairy farming in Europe. It reviews the differing ways these challenges can be addressed, setting the scene for following chapters on specific issues.
