Chapter synopsis: Consumers of organic vegetables tend to consume them in higher amounts and with more concentrated phytochemicals, so any benefits of phytochemicals for human health are doubled for a typical consumer of organic food. This chapter explores the associations between organic consumption and diet choices, addressing the claimed and perceived links between organic foods and health and assessing the combined impact of a diet of organic food. Lastly, the chapter looks ahead to future trends in research in the area concerning the benefits of organic nutrition.
