Chapter synopsis: This chapter reviews the role and importance of specialty coffees. It looks at the emergence of the sector and issues of definition, whether in terms of sensory quality attributes such as a unique flavor, geographical origin or methods of production. As well as factors affecting pricing, it reviews the role of geographical indicators and, in particular, the importance of good agricultural practices (GAP) in standardizing, improving and validating the quality attributes that underpin specialty coffees.
