Chapter synopsis: An increasing number of studies have shown that, in spite of its nutritional limitations, coffee is a complex mixture of bioactive substances that may act together to help prevent diseases when consumed in a proper way. This chapter reviews the literature on the nutritional and health-related aspects of regular coffee consumption, then examines the potential side effects, and looks ahead to future research in this area.
