Chapter synopsis: State-of-the-art monitoring systems have sensors that can early detect the onset of spoilage before “hotspots” develop and alert the user of their location through real-time data that can be delivered directly to cloud-enabled devices. The function and utility of sensors and monitoring equipment for temperature, relative humidity and moisture content, carbon dioxide and oxygen, phosphine and other gasses, and volatile organic compounds are reviewed in-depth in this chapter.
