It starts by first discussing the limitations of conventional food systems, focusing on the environmental, social and economic impacts these systems can have. The chapter moves on to provide a rationale for a transition to cellular agriculture, specifically addressing the health, sustainability and economic benefits cellular agriculture could have. A section on advances in cellular agriculture is also included, which is followed by an overview of current challenges for the cellular agriculture field.
